When it haunts me later. I think it’s lots of little things. I like there not to be peaks and valleys in the flavor profile. I like them to kind of marry into each other as they evolve. And I think it’s really important that the nose not necessarily matches, but stands up to the palate. And that the finish makes you want to keep drinking, even if you shouldn’t. That’s when I know that I’m in love with something. I had a glass of it. Next week, I’m like, “Gosh, I really still wish I had a glass of that.” And then you spend months comparing it to everything else you drink. Yes, absolutely.
